Lorsque l&#8217;on commence le mode d&#8217;<b>alimentation &#8220;sans gluten&#8221;, <\/b>c&#8217;est souvent compliqu\u00e9 de s&#8217;y retrouver ! Leur go\u00fbt est plut\u00f4t &#8220;neutre&#8221;, c&#8217;est celles qui se rapprochent le plus de la farine de bl\u00e9 que l&#8217;on conna\u00eet. Pour ses premiers pas dans le r\u00e9gime sans gluten, c&#8217;est vraiment la farine essentielle \u00e0 avoir dans ses placards. Elle est blanche, m\u00eame la farine de riz compl\u00e8te, et permet de tester ses premi\u00e8res recettes sans gluten. On la trouve dans tous les magasins bio sans probl\u00e8me. Grossi\u00e8rement, \u00e7a sera souvent la farine principale de vos recettes. Pourquoi ? Car on la trouve tr\u00e8s facilement dans n&#8217;importe quel supermarch\u00e9, ou magasins bio, et son prix est en plus assez doux, contrairement \u00e0 certaines autres farines sans gluten, comme la ch\u00e2taigne, ou le quinoa, dont le prix au kilo peut vite s&#8217;envoler. La farine de sarrasin \u00e9galement appel\u00e9e &#8220;bl\u00e9 noir&#8221; b\u00e9n\u00e9ficie en plus d&#8217;un indice glyc\u00e9mique mod\u00e9r\u00e9 de 40, particuli\u00e8rement appr\u00e9ciable pour r\u00e9duire la charge glyc\u00e9mique de vos pr\u00e9parations, en plus de votre farine de riz par exemple. La farine de quinoa est un peu amer, donc \u00e0 utiliser avec parcimonie. Et bien s\u00fbr toujours avec une autre farine, surtout si vous \u00eates comme moi, et que le go\u00fbt amer ne vous convient pas. <br \/>Concernant les proportions, il est conseill\u00e9 de ne pas l&#8217;utiliser en remplacement de la farine de bl\u00e9, mais plut\u00f4t \u00e0 moiti\u00e9. C&#8217;est l\u00e0 encore une farine sans gluten \u00e0 associer avec une autre, comme la farine de riz. Utilis\u00e9e seule, cela donne quelque chose d&#8217;assez dense, et croyez-moi j&#8217;ai d\u00e9j\u00e0 essay\u00e9 de faire des galettes type fajitas avec et cela a \u00e9t\u00e9 un \u00e9chec complet ! <br \/>La farine de ma\u00efs, comme la farine de riz a un indice glyc\u00e9mique \u00e9lev\u00e9 de 70. Je ne l&#8217;utilise quasiment pas ou plus, car comme le bl\u00e9, le ma\u00efs a \u00e9t\u00e9 tr\u00e8s trafiqu\u00e9, et il est tr\u00e8s inflammatoire pour le corps. Donc une mauvaise id\u00e9e pour les gens comme moi qui souffrent d&#8217;arthrose, ou qui veulent simplement r\u00e9duire leurs inflammations pour moins souffrir. Son prix au kilo est super int\u00e9ressant, elle est souvent m\u00eame moins ch\u00e8re que la farine de riz. <br \/>Elle a le m\u00eame indice glyc\u00e9mique que la farine de ch\u00e2taigne dont je viens de vous parler. Le sorgho est une plante souvent inconnue, mais qui ressemble de loin au ma\u00efs. Elle est originaire d&#8217;Afrique et a besoin de peu d&#8217;eau pour \u00eatre cultiv\u00e9e. C&#8217;est donc une super c\u00e9r\u00e9ale \u00e9colo en plus d&#8217;\u00eatre sans gluten. Le sorgho a une couleur ros\u00e9e, super jolie et la farine peut s&#8217;utiliser dans vos recettes sal\u00e9es et sucr\u00e9es.<\/p><p>Encore une fois, il vaut mieux la m\u00e9langer \u00e0 une autre, il est conseill\u00e9 de ne pas d\u00e9passer 40% du montant total de vos farines avec le sorgho.
