Ce <b>pain<\/b> est assez a\u00e9r\u00e9 et surtout il ne s&#8217;effrite pas et vous allez pouvoir vous r\u00e9galer \u00e0 faire des <b>sandwichs\u00a0 <\/b>ou des <b>tartines <\/b>avec pain<\/h3>\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section class=\"elementor-text-editor elementor-clearfix\">\n\t\t\t\t<p>Pour r\u00e9aliser ce pain sans gluten, j&#8217;ai utilis\u00e9 mon robot p\u00e2tissier KitchenAid, mais vous pouvez tr\u00e8s bien le faire \u00e0 la main. Il faudra juste un peu d&#8217;huile de coude.&nbsp;<\/p>\n<p>Les ingr\u00e9dients :&nbsp;<\/p>\n<ul>\n<li>130 g de farine de riz compl\u00e8te<\/li>\n<li>70 g de farine de sarrasin<\/li>\n<li>30 g de farine de sorgho<\/li>\n<li>70 g de farine de ch\u00e2taigne<\/li>\n<li>50 g de f\u00e9cule de pommes de terre<\/li>\n<li>une cuill\u00e8re \u00e0 soupe de psyllium blond<\/li>\n<li>une cuill\u00e8re \u00e0 caf\u00e9 de lin moulu<\/li>\n<li>30 g des graines de votre choix : s\u00e9same, courge, tournesol par exemple<\/li>\n<li>un demi cube de levure fra\u00eeche<\/li>\n<li>30 cl d&#8217;eau + 15 cl suppl\u00e9mentaire<\/li>\n<li>6 g de sel&nbsp;<\/li>\n<\/ul>\n<p>Commencer par d\u00e9layer le cube de levure dans 30 cl d&#8217;eau ti\u00e8de. Pas trop chaude pour ne pas &#8220;casser&#8221; la levure.&nbsp;<\/p>\n<p>Ensuite ajouter dans le bol de votre robot toutes les farines, le sel, le psyllium, et les graines de lin moulues. Bien m\u00e9langer et ajouter progressivement l&#8217;eau ti\u00e8de avec la levure d\u00e9lay\u00e9e.&nbsp;<br>\u00c0 cet instant votre futur <b>pain<\/b> ressemblera plus \u00e0 une p\u00e2te \u00e0 cake. Mais petit \u00e0 petit avec le psyllium la texture va s&#8217;\u00e9paissir. Ajouter les graines puis 5 cl suppl\u00e9mentaires d&#8217;eau et malaxer bien la p\u00e2te \u00e0 nouveau.&nbsp;<\/p>\n<p>Le m\u00eame ph\u00e9nom\u00e8ne va se reproduire. Texture de p\u00e2te \u00e0 g\u00e2teau suivi d&#8217;un \u00e9paississement. La pouss\u00e9e ! La m\u00e9thode la plus simple que j&#8217;ai trouv\u00e9 est de placer le pain au dessus d&#8217;une source chaude, avec un torchon. Je fais en g\u00e9n\u00e9ral bouillir de l&#8217;eau je la place dans le bol de mon robot, et je mets le pain dans son moule \u00e0 cake au-dessus, recouvert d&#8217;un torchon propre. Au bout d&#8217;une heure, le <b>pain <\/b>devrait avoir bien gonfl\u00e9.<\/p><p>Pr\u00e9chauffer alors le four au plus chaud qu&#8217;il le peut. Le mien monte \u00e0 270\u00b0C. Attendre la mont\u00e9e en temp\u00e9rature, et \u00e0 ce stade l\u00e0, au moment d&#8217;enfourner votre <b>pain<\/b>, ajouter une lamp\u00e9e d&#8217;eau bouillante dans la l\u00e8che-frite. Cela donnera un &#8220;coup de bu\u00e9e&#8221; \u00e0 la pr\u00e9paration, et permettra de former une belle cro\u00fbte.\u00a0<\/p><p>Laisser cuire \u00e0 temp\u00e9rature maximale pendant 10 minutes puis baisser \u00e0 200 pendant 20 minutes suppl\u00e9mentaires.\u00a0<\/p><p>Sortir du four, d\u00e9mouler et laisser bien refroidir.
