Elles sont vraiment tr\u00e8s pr\u00e9sentes sur les \u00e9tals, et \u00e7a fait plaisir de les voir, m\u00eame s&#8217;il existe un tr\u00e8s grand nombre de courges, la plupart \u00e9tant comestibles mais rarement visibles, \u00e0 part parfois dans certains march\u00e9s ou magasins bio.<\/p><p>Pour pr\u00e9parer ce velout\u00e9 prot\u00e9in\u00e9 aux deux courges quelques ingr\u00e9dients simples :\u00a0<\/p><ul><li>Un demi oignon rouge<\/li><li>Une demie courge butternut<\/li><li>Un demi potimarron<\/li><li>Une petite bo\u00eete de haricots blancs<\/li><li>15 cl de lait de coco<\/li><li>Un pouce de gingembre<\/li><li>Sel et poivre<\/li><\/ul><p>Dans une grande casserole, ou une sauteuse, faire revenir l&#8217;oignon coup\u00e9 finement. Ajouter alors le gingembre et les courges coup\u00e9es en morceaux. Recouvrir d&#8217;eau ou de bouillon, jusqu&#8217;\u00e0 ce qu&#8217;elles soient tendres. Il suffit de planter un couteau dans un morceau. S&#8217;il s&#8217;enfonce sans probl\u00e8me, c&#8217;est que les courges sont cuites.<\/p><p>Retirer les morceaux sans l&#8217;eau de cuisson, et les ajouter dans un bol. Ajouter le lait de coco et commencer \u00e0 mixer. Rincer les haricots blancs et ajouter le contenu de la bo\u00eete, puis mixer \u00e0 nouveau. M\u00e9langer bien, assaisonner avec le sel et le poivre, et ajouter de l&#8217;eau de cuisson jusqu&#8217;\u00e0 obtenir la texture, et la densit\u00e9 souhait\u00e9e.\u00a0<br \/>J&#8217;aime mes soupes ou mes velout\u00e9s assez \u00e9pais, donc je ne rajouter que quelques cuill\u00e8res \u00e0 soupe, mais \u00e0 vous de voir, selon vos go\u00fbts.\u00a0<\/p><p>Servir ce velout\u00e9 de courges bien chaud, accompagn\u00e9 pourquoi pas de cro\u00fbtons fait avec du pain sans gluten, ou des pois chiches grill\u00e9s qui apportent une petite touche croquante. J&#8217;adore aussi accompagner les velout\u00e9s de ch\u00e2taignes comme dans cette version faite de <a href=\"https:\/\/nourrisante.fr\/index.php\/2020\/03\/11\/veloute-de-topinambours-panais-et-pomme-de-terre\/\" target=\"_blank\" rel=\"noopener\">topinambours et panais<\/a>.<\/p><p>Et vous, vous lez aimez comment les velout\u00e9s, et soupes?
