Un risotto aux asperges vertes et aux artichauts. Deux l\u00e9gumes que j&#8217;adore, mais qui ne sont peut-\u00eatre pas si utilis\u00e9s que \u00e7a dans nos cuisines. Il faut dire que les asperges peuvent vite revenir ch\u00e8res.\u00a0<\/p><p><span style=\"font-size: 15px;\">Pour limiter le prix attendez la pleine saison, et \u00e9vitez de craquer au tout d\u00e9but du printemps. Fin avril, d\u00e9but mai semble vraiment l&#8217;id\u00e9al pour obtenir les asperges aussi bien les blanches que les vertes \u00e0 des prix d\u00e9cents. Et en plus de \u00e7a, vous les trouverez \u00e0 peu pr\u00e8s partout, que \u00e7a soit dans votre magasin bio, sur le march\u00e9 ou dans une grande surface.\u00a0<\/span><\/p><p>Quant aux c\u0153urs d&#8217;artichauts, plusieurs options, vous faites cuire \u00e0 la vapeur plusieurs artichauts frais vous mangez le reste et sauvez les c\u0153urs. Ou alors vous pouvez aussi les prendre en bo\u00eete de conserve ou surgel\u00e9s. Cela fonctionne aussi !\u00a0<\/p><p>Pour cette recette pour environ 2 personnes il vous faut :<\/p><ul><li>200 g de <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Riz_Arborio\">riz arborio<\/a> (le riz sp\u00e9cial risotto)\u00a0<\/li><li>1 cube de bouillon de l\u00e9gumes sans gluten\u00a0<\/li><li>80 g de petits pois surgel\u00e9s<\/li><li>400 g d&#8217;asperges vertes<\/li><li>4-5 c\u0153urs d&#8217;artichauts<\/li><li>1 petit oignon rouge\u00a0<\/li><li>huile d&#8217;olive<\/li><li>parmesan v\u00e9g\u00e9tal (optionnel)\u00a0<\/li><\/ul><p>Commencez par faire bouillir environ un litre d&#8217;eau. Je le fais personnellement dans une bouilloire. Puis transvasez dans un r\u00e9cipient type casserole et ajoutez votre bouillon. Il peut \u00eatre de l\u00e9gumes ou de volaille. Mais attention si vous \u00eates tr\u00e8s sensibles au gluten, beaucoup de ces cubes contiennent du gluten. Soyez donc tr\u00e8s prudents lorsque vous faites vos courses.\u00a0<\/p><p>Dans une grande po\u00eale faire revenir l&#8217;oignon rouge coup\u00e9 finement dans l&#8217;huile d&#8217;olive. Une fois qu&#8217;il est translucide, ajoutez les 200 g de riz arborio, et \u00e9ventuellement ajoutez un peu d&#8217;huile d&#8217;olive. Le riz doit s&#8217;imbiber l\u00e0 encore du bouillon. Le feu doit \u00eatre r\u00e9gl\u00e9 sur moyen, la pr\u00e9paration ne doit pas bouillir. Il va maintenant falloir rester pr\u00e8s du feu, car le risotto est un plat simple mais qui demande de la patience ! \u00c0 chaque fois que le riz a absorb\u00e9 le bouillon, rajoutez une louche. Go\u00fbter r\u00e9guli\u00e8rement pour savoir lorsque le riz est cuit.&nbsp;<\/p>\n<p>Quant aux asperges, vous pouvez les laver et coupez les extr\u00e9mit\u00e9s pendant que vous surveillez votre risotto. Vers la fin de la cuisson de celui-ci placez les dans une po\u00eale et faites-les l\u00e9g\u00e8rement dorer. C&#8217;est aussi \u00e0 ce moment l\u00e0 que vous pouvez ajouter vos petits pois surgel\u00e9s qui vont cuire rapidement avec le risotto.&nbsp;<\/p>\n<p>Une fois votre riz bien cuit, il n&#8217;y a plus qu&#8217;\u00e0 disposer l&#8217;ensemble dans une belle assiette avec vos c\u0153urs d&#8217;artichauts, et vos asperges. Pour la petite touche vous pouvez aussi ajouter du <a href=\"https:\/\/nourrisante.fr\/index.php\/2019\/12\/10\/parmesan-vegan-sans-produits-laitiers\/\">parmesan v\u00e9g\u00e9tal.<\/a> Personnellement j&#8217;adore \u00e7a et je ne con\u00e7ois pas mon risotto aux asperges et aux artichauts sans cette touche en plus !&nbsp;<\/p>\n<p>Et vous, vous aimez le risotto ?
