Ce type d&#8217;alimentation est connu pour utiliser des aliments et farines \u00e0 indice glyc\u00e9mique \u00e9lev\u00e9.\u00a0<span style=\"font-size: 15px;\">L&#8217;indice glyc\u00e9mique est une valeur qui classifie les aliments selon leur capacit\u00e9 \u00e0 \u00e9lever ou non votre glyc\u00e9mie. Tous les sucres ont des IG hauts, sauf le sucre de coco avec un IG de 35 et le sucre de bouleau dont l&#8217;IG est de seulement 8. Mais le champion des sucres \u00e0 indice glyc\u00e9mique faible, aussi appel\u00e9 xylitol, est l&#8217;un des plus chers \u00e0 ma connaissance. L&#8217;id\u00e9e c&#8217;est de limiter le sucre, et la meilleure option, c&#8217;est de sucrer avec les fruits. Si vous le pouvez, chercher des farines compl\u00e8tes. Plus elles le sont, plus leur indice glyc\u00e9mique baisse. Pour reprendre l\u2019exemple de la farine de riz, elle a un indice glyc\u00e9mique de 85. C\u2019est d\u2019ailleurs ce que je fais, et que vous avez peut-\u00eatre remarqu\u00e9 dans mes recettes. La farine de sarrasin a un indice glyc\u00e9mique mod\u00e9r\u00e9 de 50. Celle de pois chiche de 35. Vous avez peut-\u00eatre d&#8217;ailleurs remarqu\u00e9, comme pour les farines, c\u2019est une technique que j\u2019utilise fr\u00e9quemment dans mes recettes, comme celle de ces <a href=\"https:\/\/nourrisante.fr\/index.php\/2019\/11\/05\/muffins-banane-aux-pepites-de-chocolat\/\">muffins<\/a>. L&#8217;indice glyc\u00e9mique de la poudre d&#8217;amandes n&#8217;est que de 20 donc cela r\u00e9duit fortement la charge glyc\u00e9mique de la pr\u00e9paration. Et en plus cela lui donne plus de moelleux. Que du bonheur ! \u00a0Il est \u00e9galement possible de rajouter une cuill\u00e8re \u00e0 soupe de beurre de noisettes, d\u2019amandes ou de cajou dans vos pr\u00e9parations. Mais le riz blanc a malheureusement lui aussi un IG \u00e9lev\u00e9. Pas de secret, si la farine de riz a un IG \u00e9lev\u00e9, l&#8217;ingr\u00e9dient original aussi. Par exemple, les brocolis, l&#8217;un de mes l\u00e9gumes pr\u00e9f\u00e9r\u00e9s, a un indice glyc\u00e9mique de 15 seulement. C&#8217;est pareil pour tous les choux, que vous pouvez par exemple cuisiner en <a href=\"https:\/\/nourrisante.fr\/index.php\/2019\/10\/29\/coleslow-le-chou-fait-sa-star-en-salade\/\" target=\"_blank\" rel=\"noopener\">coleslow <\/a>mais aussi les courgettes, les poireaux, ou les \u00e9pinards. Pour les fruits, la plupart ont un IG mod\u00e9r\u00e9.
