Pour ma part, je ne le connaissais pas jusqu&#8217;\u00e0 peu ! Je savais que ce l\u00e9gume dit &#8220;ancien&#8221; avait mauvaise r\u00e9putation car nos grands-parents et arri\u00e8res grands-parents le mangeaient pendant la guerre. Mais je n&#8217;avais aucune id\u00e9e de son go\u00fbt ! Je vous propose ici une<b> recette de velout\u00e9 de topinambours, panais et pommes de terre<\/b> qui va r\u00e9v\u00e9ler le go\u00fbt subtil des topinambours. Selon moi, cela ressemble \u00e0 de l&#8217;artichaut. D&#8217;ailleurs il est aussi appel\u00e9 &#8220;<b>artichaut de J\u00e9rusalem<\/b>&#8220;. Le <b>topinambour <\/b>est un <b>tubercule <\/b>tout comme le panais !<\/p>\n<p>Le panais est lui aussi un l\u00e9gume dit ancien, associ\u00e9 \u00e9galement \u00e0 la pomme de terre dans cette recette de velout\u00e9.<\/p>\n<p>Pour la r\u00e9aliser, il faut :&nbsp;<\/p>\n<ul>\n<li>1 panais&nbsp;<\/li>\n<li>4 topinambours<\/li>\n<li>1 pomme de terre<\/li>\n<li>25 cl de bouillon de l\u00e9gumes ou volaille environ&nbsp;<\/li>\n<\/ul>\n<p>\u00c9plucher tous les tubercules. Puis faire cuire les l\u00e9gumes \u00e0 la vapeur. Attention tous ne prennent pas le m\u00eame temps de cuisson. Ce sont les pommes de terre que vous devrez mettre en premier, car ce sont eux qui prennent le plus de temps \u00e0 cuire; Puis ensuite les panais et les topinambours.&nbsp;<\/p>\n<p>Pendant que vos trois ingr\u00e9dients principaux cuisent \u00e0 la vapeur vous pouvez faire chauffer de l&#8217;eau. Puis une fois bien chaude, y ajouter un cube de bouillon de l\u00e9gumes ou de volaille. Une fois que tout est bien cuit,&nbsp; r\u00e9cup\u00e9rez vos tubercules, puis mixer tout \u00e7a, tout en ajoutant progressivement le bouillon.&nbsp;<\/p>\n<p>Voil\u00e0 c&#8217;est termin\u00e9 !
